Vegan carrot cake with cashew topping 

INGREDIENTS:

 
  • 500g carrots
  • 5 tablespoons linseed, ground
  • 310ml hot water
  • 500g flour
  • 2 teaspoons cinnamon
  • 1.5 teaspoons ginger
  • 1 teaspoon ground nutmeg
  • 1.5 teaspoons salt
  • 1 teaspoon of soda
  • 1.5 teaspoons baking powder
  • 200g sugar
  • 375 ml of oil
  • 150g hazelnuts, chopped
 

Cream:

  • 220 g cashews, soaked overnight
  • 3/4 cup almond or other vegetable drink
  • 2-4 tablespoons maple syrup
  • 3 tablespoons of lemon juice
High mould 39x23.5x7cm

PREPARATION:

  1. Peel and grate the carrots on a small grater. Pour warm water over the flaxseed and leave to stand for a few minutes.
  2. In a large bowl, mix the flour, baking soda and spices. In a smaller one, whisk together the oil, sugar and swollen hay, then combine the dry ingredients with the wet ingredients, mix and add the carrots and nuts. Pour into a cake tin lined with baking paper and bake in an oven preheated to 180 degrees for about 40-45 minutes.
  3. Meanwhile, prepare the cashew cream. Pour all the ingredients into the blender bowl and blend to a smooth cream. Spread the cooled cake thickly with the cream and sprinkle with cinnamon.
  4. Cut the cooled cake in half, place one part on top of the other before spreading each layer with cream.
